Electrodialysis is perfectly suited for the selective removal of salt from non-ionic matrices: It allows to recover fermentation products like ammonium acetate, gluconate or citrate with conventional electrodialysis. Or the direct isolation of the free acid with bipolar ED. The purification of sugar melasses or juices are other examples.
